Description

This is a simple and comforting white chicken chili recipe you can make in one pot on the stovetop. It’s perfect for a weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: shredded cheese, sour cream, chopped cilantro, avocado


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic, cumin, chili powder, oregano, and cayenne pepper (if using) and cook for 1 minute more until fragrant.
  3. Stir in the cannellini beans, great northern beans, diced green chilies, and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Return the chicken to the pot. Stir in the heavy cream. Cook until heated through, about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, with your favorite garnishes.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
  • If you don’t have heavy cream, you can use half-and-half or milk, but the chili will be less rich.
  • This chili can be made ahead of time and reheated. The flavors will meld even more overnight.
