Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles, broken into pieces
  • 15 ounces ricotta cheese
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  2. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes and tomato sauce. Stir in basil, oregano, salt, and pepper. Bring to a simmer.
  4. Add the broken lasagna noodles to the sauce. Stir to combine and ensure noodles are submerged. Cover the skillet and simmer for 15-20 minutes, or until noodles are tender, stirring occasionally to prevent sticking.
  5. In a medium bowl, mix together ricotta cheese, egg, and Parmesan cheese.
  6. Once the noodles are tender, dollop spoonfuls of the ricotta mixture over the lasagna. Sprinkle evenly with shredded mozzarella cheese.
  7. Cover the skillet again and cook for 5-7 minutes, or until the mozzarella is melted and bubbly.
  8. Let stand for 5 minutes before serving.

  • You can use a mix of ground beef and Italian sausage for extra flavor.
  • For a vegetarian option, substitute the ground meat with crumbled firm tofu or a plant-based ground substitute.
