- 1 pound ground beef or Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 lasagna noodles, broken into pieces
- 15 ounces ricotta cheese
- 1 egg
- 1/4 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned, breaking it up with a spoon. Drain off any excess fat.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- Pour in crushed tomatoes and tomato sauce. Stir in basil, oregano, salt, and pepper. Bring to a simmer.
- Add the broken lasagna noodles to the sauce. Stir to combine and ensure noodles are submerged. Cover the skillet and simmer for 15-20 minutes, or until noodles are tender, stirring occasionally to prevent sticking.
- In a medium bowl, mix together ricotta cheese, egg, and Parmesan cheese.
- Once the noodles are tender, dollop spoonfuls of the ricotta mixture over the lasagna. Sprinkle evenly with shredded mozzarella cheese.
- Cover the skillet again and cook for 5-7 minutes, or until the mozzarella is melted and bubbly.
- Let stand for 5 minutes before serving.

- For a vegetarian option, substitute the ground meat with crumbled firm tofu or a plant-based ground substitute.
