- 4 Boneless, skinless chicken breasts
- 4 oz Cream cheese, softened
- 5 oz Fresh spinach, chopped
- 2 cloves Garlic, minced
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon Olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the softened cream cheese, chopped spinach, minced garlic, and Parmesan cheese. Season with a little salt and pepper.
- Use a sharp knife to carefully cut a deep pocket horizontally into the thickest side of each chicken breast. Do not cut all the way through.
- Spoon the spinach and cheese mixture evenly into the pockets of the chicken breasts. Secure the opening with toothpicks if necessary.
- Rub the outside of the stuffed chicken breasts with olive oil. Season the exterior with salt and pepper.
- Place the chicken breasts in a baking dish.
- Bake for 25 to 30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the juices run clear.
- Let the chicken rest for 5 minutes before serving. Remove any toothpicks.
