Ingredients

  • 2 slices of bread
  • 1/4 cup chopped spinach
  • 2 tablespoons chopped artichoke hearts
  • 2 tablespoons cream cheese
  • 1 tablespoon mayonnaise
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon butter


Instructions

  1. In a small bowl, mix together the chopped spinach, artichoke hearts, cream cheese, and mayonnaise.
  2. Spread this mixture evenly over one slice of bread.
  3. Top with mozzarella and cheddar cheeses.
  4. Place the second slice of bread on top.
  5. Butter the outside of the sandwich.
  6. Grill in a pan over medium heat for about 3-4 minutes per side, until golden brown and the cheese is melted.

Notes

  • You can use fresh or frozen chopped spinach. If using frozen, make sure to thaw and squeeze out excess water.
  • Feel free to add a pinch of garlic powder to the spinach-artichoke mixture for extra flavor.
