A refreshing and spicy watermelon and feta salad with mint and lime.


Ingredients

  • 4 cups cubed watermelon
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint
  • 1 jalapeño, thinly sliced
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and black pepper to taste


Instructions

  1. Combine watermelon, feta cheese, mint, and jalapeño in a large bowl.
  2. In a small bowl, whisk together lime juice and olive oil.
  3. Pour dressing over salad and toss gently to combine.
  4. Season with salt and black pepper to taste.
  5. Serve immediately.

Notes

  • For less spice, remove seeds from the jalapeño.
