Description
A refreshing and spicy watermelon and feta salad with mint and lime.
Ingredients

- 4 cups cubed watermelon
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1 jalapeño, thinly sliced
- Juice of 1 lime
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Combine watermelon, feta cheese, mint, and jalapeño in a large bowl.
- In a small bowl, whisk together lime juice and olive oil.
- Pour dressing over salad and toss gently to combine.
- Season with salt and black pepper to taste.
- Serve immediately.
Notes
- For less spice, remove seeds from the jalapeño.
- Add red onion or cucumber for extra flavor and crunch.
