Description

Ingredients

  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, sliced
  • 1 broccoli crown, cut into florets
  • 1 carrot, thinly sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup sriracha sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon sesame oil
  • Cooked rice, for serving


Instructions

  1. In a bowl, toss the tofu cubes with soy sauce and cornstarch until evenly coated.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown and crispy on all sides. Remove tofu from the skillet and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the red bell pepper, broccoli, and carrot. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
  4. Add the minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together the sriracha sauce, rice vinegar, maple syrup, and sesame oil.
  6. Pour the sauce over the vegetables in the skillet. Bring to a simmer and cook for 1-2 minutes until the sauce thickens slightly.
  7. Return the crispy tofu to the skillet and toss gently to coat with the sauce.
  8. Serve the Spicy Sriracha Tofu Stir Fry immediately over cooked rice.

Notes

  • For extra crispy tofu, you can bake or air fry the tofu before adding it to the stir fry.
  • Feel free to add other vegetables like snap peas, mushrooms, or water chestnuts.
