- 1 block (14 oz) extra-firm tofu, pressed and cubed
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
- 1 red bell pepper, sliced
- 1 broccoli crown, cut into florets
- 1 carrot, thinly sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup sriracha sauce
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon sesame oil
- Cooked rice, for serving
Instructions
- In a bowl, toss the tofu cubes with soy sauce and cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown and crispy on all sides. Remove tofu from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the red bell pepper, broccoli, and carrot. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
- Add the minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
- In a small bowl, whisk together the sriracha sauce, rice vinegar, maple syrup, and sesame oil.
- Pour the sauce over the vegetables in the skillet. Bring to a simmer and cook for 1-2 minutes until the sauce thickens slightly.
- Return the crispy tofu to the skillet and toss gently to coat with the sauce.
- Serve the Spicy Sriracha Tofu Stir Fry immediately over cooked rice.
Notes
- For extra crispy tofu, you can bake or air fry the tofu before adding it to the stir fry.
- Feel free to add other vegetables like snap peas, mushrooms, or water chestnuts.
