Description

Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (or to taste)
  • Salt to taste
  • 1/4 cup crumbled cotija cheese (or feta cheese)
  • 1/4 cup finely diced red onion


Instructions

  1. If using frozen corn, thaw it. If using fresh corn, you can grill or boil it until tender, then cut the kernels off the cob.
  2. In a medium bowl, combine mayonnaise, cilantro, lime juice, chili powder, cumin, and cayenne pepper.
  3. Add the corn kernels to the bowl with the dressing.
  4. Season with salt to your liking.
  5. Gently mix everything together until the corn is well coated.
  6. Stir in the cotija cheese and diced red onion.
  7. Taste and adjust seasonings if needed.
  8. Serve immediately or chill for later.

Notes

  • For an extra smoky flavor, grill the corn before cutting off the kernels.
  • Adjust the cayenne pepper to control the level of spice.
  • If cotija cheese is unavailable, feta cheese can be substituted.
