- 4 ears fresh corn, husked
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup crumbled cotija cheese, plus more for garnish
- 1/4 cup finely chopped fresh cilantro, plus more for garnish
- 1-2 jalapeños, finely minced (remove seeds for less heat)
- 1 clove garlic, minced
- 1 teaspoon chili powder, plus more for dusting
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- Juice of 1 lime
- Salt to taste
- Hot sauce, for serving (optional)
Instructions
- Preheat a grill or grill pan to medium-high heat. Lightly brush the corn ears with olive oil.
- Grill the corn for 8-12 minutes, turning occasionally, until charred in spots and tender.
- While the corn cooks, prepare the spicy sauce. In a medium bowl, combine mayonnaise, sour cream, cotija cheese, cilantro, minced jalapeños, minced garlic, chili powder, smoked paprika, and cayenne pepper (if using).
- Add the lime juice to the sauce and stir until well combined. Season with salt to taste.
- Once the corn is grilled, carefully spread the spicy sauce evenly over each ear of corn.
- Garnish with extra crumbled cotija cheese and fresh cilantro. Dust with a little more chili powder if desired.
- Serve immediately with hot sauce on the side, if you like.
Notes
- For a deeper smoky flavor, use chipotle powder instead of or in addition to chili powder.
- Adjust the amount of jalapeño and cayenne pepper to your preferred spice level.
- If fresh corn is not available, you can use frozen corn. Thaw it completely and pat dry before grilling.
