  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • 1 (15-ounce) can brown or green lentils, rinsed and drained
  • 1/4 cup vegetable broth
  • Salt and black pepper to taste
  • 8-10 small corn or flour tortillas
  • Optional toppings: chopped cilantro, diced avocado, salsa, lime wedges


Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir and cook for 1 minute until fragrant.
  3. Add the rinsed and drained lentils and vegetable broth to the skillet. Stir to combine.
  4. Simmer for 5-7 minutes, stirring occasionally, until the lentils are heated through and the liquid has mostly evaporated. Season with salt and pepper to taste.
  5. Warm the tortillas according to package directions.
  6. Spoon the spicy lentil mixture into the warm tortillas.
  7. Top with your favorite taco toppings and serve immediately.

Notes

  • For extra spice, add a pinch more cayenne pepper or a dash of your favorite hot sauce to the lentil mixture.
  • Feel free to add other vegetables to the lentil filling, such as diced bell peppers or corn.
  • These tacos are best served immediately but can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
