- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Pinch of cayenne pepper (optional)
- 1 (15-ounce) can brown or green lentils, rinsed and drained
- 1/4 cup vegetable broth
- Salt and black pepper to taste
- 8-10 small corn or flour tortillas
- Optional toppings: chopped cilantro, diced avocado, salsa, lime wedges
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir and cook for 1 minute until fragrant.
- Add the rinsed and drained lentils and vegetable broth to the skillet. Stir to combine.
- Simmer for 5-7 minutes, stirring occasionally, until the lentils are heated through and the liquid has mostly evaporated. Season with salt and pepper to taste.
- Warm the tortillas according to package directions.
- Spoon the spicy lentil mixture into the warm tortillas.
- Top with your favorite taco toppings and serve immediately.
Notes
- For extra spice, add a pinch more cayenne pepper or a dash of your favorite hot sauce to the lentil mixture.
- Feel free to add other vegetables to the lentil filling, such as diced bell peppers or corn.
