Spicy Cajun Shrimp and Rice Bowl

Description

Prepare a flavorful and spicy Cajun shrimp served over seasoned rice for a quick, satisfying meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 teaspoons Cajun seasoning (or more for extra spice)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked white rice
  • 1/2 cup chicken broth
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped green bell pepper
  • 1/4 cup sliced Andouille sausage (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Prepare your rice according to package directions. While the rice cooks, prepare the shrimp mixture.
  2. In a medium bowl, toss the shrimp with 1 teaspoon of Cajun seasoning, smoked paprika, and cayenne pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the Andouille sausage, if using, and cook until lightly browned, about 3 minutes. Remove the sausage and set aside.
  4. Add the butter to the same skillet. Add the onion and bell pepper and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  5. Add the seasoned shrimp to the skillet. Cook for 2-3 minutes per side until pink and opaque. Do not overcook.
  6. Stir in the remaining 1 teaspoon of Cajun seasoning and the chicken broth. Bring to a simmer and cook until the liquid reduces slightly, about 2 minutes. Stir the cooked sausage back into the skillet.
  7. To assemble the bowls, divide the cooked rice among serving bowls. Spoon the spicy Cajun shrimp and sauce mixture over the rice.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, increase the cayenne pepper or add a dash of hot sauce to the skillet during the last minute of cooking.
  • If you prefer a richer sauce, substitute half of the chicken broth with heavy cream.
  • Use brown rice instead of white rice for added fiber.
