- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- Pinch of ground cloves
- 1 cup pumpkin puree
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until crumbs are moistened. Press mixture evenly into the bottom of a 9-inch springform pan.
- Bake the crust for 8-10 minutes. Remove from oven and let cool.
- In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate small bowl, whisk together cinnamon, nutmeg, ginger, and cloves. Add the spice mixture to the cream cheese mixture and mix well.
- Stir in pumpkin puree until just combined.
- Pour the pumpkin cheesecake filling over the prepared crust.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.

- For a smoother cheesecake, ensure your cream cheese and eggs are at room temperature.
- To prevent cracking, avoid over-baking.
- Serve chilled, optionally with whipped cream or a caramel drizzle.
