- 4 cups fresh peaches, peeled, pitted, and diced
- 1 cup granulated sugar
- 1/2 cup apple cider vinegar
- 1/4 cup finely chopped red onion
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 teaspoon salt
Instructions
- Combine diced peaches, sugar, apple cider vinegar, chopped red onion, grated ginger, cinnamon, cloves, red pepper flakes (if using), and salt in a large saucepan.
- Stir well to combine all ingredients.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Once boiling, reduce the heat to low and simmer, uncovered, for 45-60 minutes, or until the chutney has thickened to your desired consistency. Stir frequently to prevent sticking.
- Remove from heat and let cool completely.
- Transfer the cooled chutney to clean jars or an airtight container.
- Store in the refrigerator for up to 2 weeks.
Notes
- For a smoother chutney, you can pulse it a few times with an immersion blender after cooking.
- Adjust the red pepper flakes to control the level of heat.
- This chutney is delicious served with cheese and crackers, roasted meats, or as a sandwich spread.
