  • 1/2 cup orange zest (from about 2 oranges)
  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and cocoa powder.
  3. In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the grated zucchini, orange zest, and chopped walnuts. If using, add the chocolate chips.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
