- 1 tablespoon vegetable oil
- 1 cup cooked chicken, diced
- 1 cup frozen peas and carrots
- 2 cups cooked rice, cold
- 2 large eggs, beaten
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add diced chicken and cook until lightly browned.
- Stir in frozen peas and carrots, and cook for 2-3 minutes until tender.
- Push chicken and vegetables to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
- Add cooked rice to the skillet. Break up any clumps.
- Pour soy sauce and sesame oil over the rice mixture.
- Stir everything together until well combined and heated through, about 3-5 minutes.
- Serve immediately.

- Using cold, day-old rice is best for fried rice as it prevents it from becoming mushy.
