Description

Enjoy delicious, takeout-style chicken fried rice at home in minutes with this easy recipe from Gourmet Gusto. It’s perfect for a quick weeknight meal.

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 cup cooked chicken, diced
  • 1 cup frozen peas and carrots
  • 2 cups cooked rice, cold
  • 2 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until lightly browned.
  3. Stir in frozen peas and carrots, and cook for 2-3 minutes until tender.
  4. Push chicken and vegetables to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
  5. Add cooked rice to the skillet. Break up any clumps.
  6. Pour soy sauce and sesame oil over the rice mixture.
  7. Stir everything together until well combined and heated through, about 3-5 minutes.
  8. Serve immediately.

Notes

  • Using cold, day-old rice is best for fried rice as it prevents it from becoming mushy.
  • Feel free to add other vegetables like chopped onions, bell peppers, or broccoli.
  • Adjust soy sauce to your taste.
