Description
A simple, refreshing, non-alcoholic beverage made with fresh lemon juice, mint, and sparkling water.

- 1/2 cup fresh lemon juice
- 1/4 cup fresh mint leaves, lightly packed
- 2 tablespoons granulated sugar (or sweetener of choice)
- 1/2 cup water
- 1 cup chilled club soda or sparkling water
- Ice cubes
- Lemon slices for garnish
- Mint sprigs for garnish
Instructions
- Combine the sugar and water in a small saucepan. Heat gently, stirring until the sugar dissolves completely to make a simple syrup. Remove from heat and let cool.
- Place the mint leaves in the bottom of a sturdy glass or cocktail shaker. Gently muddle (press lightly) the mint leaves to release their oils. Do not crush them completely.
- Add the fresh lemon juice and the cooled simple syrup to the muddled mint. Stir briefly.
- Fill serving glasses with ice cubes. Strain the lemon-mint mixture evenly into the prepared glasses.
- Top each glass with chilled club soda or sparkling water. Stir gently once to combine.
- Garnish each mocktail with a lemon slice and a fresh mint sprig before serving.
Notes
- For a lower sugar option, substitute the simple syrup with 2 tablespoons of agave nectar mixed with 2 tablespoons of warm water.
- If you do not have club soda, use plain seltzer water or lemon-lime soda for a sweeter result.
- Prepare the lemon-mint syrup base ahead of time and store it in the refrigerator for up to three days.
