Description

A simple, refreshing, non-alcoholic beverage made with fresh lemon juice, mint, and sparkling water.

Ingredients

Scale
  • 1/2 cup fresh lemon juice
  • 1/4 cup fresh mint leaves, lightly packed
  • 2 tablespoons granulated sugar (or sweetener of choice)
  • 1/2 cup water
  • 1 cup chilled club soda or sparkling water
  • Ice cubes
  • Lemon slices for garnish
  • Mint sprigs for garnish

Instructions

  1. Combine the sugar and water in a small saucepan. Heat gently, stirring until the sugar dissolves completely to make a simple syrup. Remove from heat and let cool.
  2. Place the mint leaves in the bottom of a sturdy glass or cocktail shaker. Gently muddle (press lightly) the mint leaves to release their oils. Do not crush them completely.
  3. Add the fresh lemon juice and the cooled simple syrup to the muddled mint. Stir briefly.
  4. Fill serving glasses with ice cubes. Strain the lemon-mint mixture evenly into the prepared glasses.
  5. Top each glass with chilled club soda or sparkling water. Stir gently once to combine.
  6. Garnish each mocktail with a lemon slice and a fresh mint sprig before serving.

Notes

  • For a lower sugar option, substitute the simple syrup with 2 tablespoons of agave nectar mixed with 2 tablespoons of warm water.
  • If you do not have club soda, use plain seltzer water or lemon-lime soda for a sweeter result.
  • Prepare the lemon-mint syrup base ahead of time and store it in the refrigerator for up to three days.
