  • 2 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup chopped fresh spinach
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons shredded mozzarella cheese


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add spinach and cook until wilted, about 2 minutes.
  3. Remove from heat and stir in feta cheese, dill, mint, black pepper, and garlic powder.
  4. Spread the spinach and feta mixture evenly over one half of each tortilla.
  5. Sprinkle mozzarella cheese over the filling.
  6. Fold the other half of each tortilla over the filling.
  7. Place the folded quesadillas in the skillet and cook for 3-4 minutes per side, until golden brown and the cheese is melted.
  8. Cut into wedges and serve immediately.
