- 2 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup chopped fresh spinach
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh dill
- 1 tablespoon chopped fresh mint
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons shredded mozzarella cheese
Instructions
- Heat olive oil in a skillet over medium heat.
- Add spinach and cook until wilted, about 2 minutes.
- Remove from heat and stir in feta cheese, dill, mint, black pepper, and garlic powder.
- Spread the spinach and feta mixture evenly over one half of each tortilla.
- Sprinkle mozzarella cheese over the filling.
- Fold the other half of each tortilla over the filling.
- Place the folded quesadillas in the skillet and cook for 3-4 minutes per side, until golden brown and the cheese is melted.
- Cut into wedges and serve immediately.
Notes
