- 1 pound spaghetti
- 1/2 cup extra virgin olive oil
- 6 cloves garlic, thinly sliced
- 1/4 teaspoon red pepper flakes, or to taste
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook spaghetti in a large pot of salted boiling water according to package directions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium-low heat.
- Add the sliced garlic and red pepper flakes to the skillet. Cook gently, stirring occasionally, until the garlic is golden brown and fragrant, about 5-7 minutes. Be careful not to burn the garlic.
- Reserve about 1 cup of the pasta cooking water, then drain the spaghetti.
- Add the drained spaghetti to the skillet with the garlic and oil.
- Toss well to coat the pasta. Add the chopped parsley, salt, and black pepper.
- Add a splash of the reserved pasta water to create a light sauce that coats the spaghetti. Toss again.
- Serve immediately.
Notes
- Adjust the red pepper flakes to your preferred level of heat.
- For a richer flavor, you can add a tablespoon of butter at the end.
- A squeeze of lemon juice can add a bright finish.
