This Southern-Style Squash Dressing Casserole blends tender squash with savory cornbread dressing for a comforting holiday side dish.

- 2 pounds yellow squash, sliced
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup butter
- 4 cups cornbread crumbs
- 2 cups chicken broth
- 2 large eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground sage
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Steam or boil squash until tender. Drain well and mash.
- In a large skillet, melt butter over medium heat. Sauté onion and celery until softened, about 5-7 minutes.
- In a large bowl, combine mashed squash, sautéed onion and celery, cornbread crumbs, chicken broth, beaten eggs, salt, pepper, and sage. Mix until well combined.
- Spoon the mixture into the prepared baking dish. If using, sprinkle with cheddar cheese.
- Bake for 30-35 minutes, or until golden brown and heated through.
- Let stand for a few minutes before serving.
Notes
- For extra flavor, roast the squash instead of steaming or boiling it.
- You can prepare the dressing mixture ahead of time and refrigerate it overnight.
- Adjust seasonings to your preference.
