Description

  • 1 cup buttermilk
  • 1/2 cup shredded sharp cheddar cheese (optional)
  • 2 tablespoons chopped pickled jalapenos (optional)


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a mini muffin tin.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and baking soda.
  3. In a separate bowl, whisk the vegetable oil, egg, and buttermilk until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Fold in the shredded cheddar cheese and jalapenos, if using.
  6. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
  7. Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the poppers cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  9. For a fried version, heat 2 inches of vegetable oil in a deep pot to 350 degrees Fahrenheit. Drop spoonfuls of batter into the hot oil and fry for 2 to 3 minutes, turning occasionally, until golden brown. Drain on paper towels.

  • For a richer flavor, substitute half the vegetable oil with melted bacon grease.
