Ingredients

  • 1 pound dry navy beans
  • 6 cups water
  • 1 onion, chopped
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon dry mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices bacon, cooked and crumbled


Instructions

  1. Rinse and sort the navy beans. Soak them in water overnight.
  2. Drain the soaked beans and place them in a large pot with 6 cups of fresh water. Bring to a boil, then reduce heat and simmer for 1 hour, or until tender.
  3. Drain the beans, reserving 1 cup of the cooking liquid.
  4. Preheat oven to 325 degrees F (160 degrees C).
  5. In a large oven-safe pot or Dutch oven, combine the drained beans, reserved cooking liquid, chopped onion, molasses, brown sugar, ketchup, dry mustard, salt, and pepper. Stir to combine.
  6. Cover and bake for 2 to 2 1/2 hours, or until the beans are thick and bubbly. Stir occasionally.
  7. Stir in the crumbled bacon before serving.

Notes

  • For a deeper flavor, you can add a pinch of smoked paprika.
  • If the beans seem dry while baking, add a little more water or reserved cooking liquid.
