  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon butter
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups cooked grits
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season shrimp with salt, black pepper, and cayenne pepper.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add butter to the skillet and melt. Add onion and bell pepper and cook until softened, about 5 minutes.
  5. Add minced garlic and cook for 1 minute more until fragrant.
  6. Pour in chicken broth and heavy cream. Bring to a simmer and cook until slightly thickened, about 5 minutes.
  7. Stir in Parmesan cheese until melted and smooth.
  8. Return the cooked shrimp to the skillet and stir to coat with the sauce.
  9. Serve the shrimp and sauce over hot cooked grits. Garnish with fresh parsley.

Notes

  • For spicier shrimp, add more cayenne pepper.
  • Feel free to add other vegetables like diced tomatoes or mushrooms.
  • Ensure grits are cooked to your preferred consistency.
