  • 2 cups chopped fresh rhubarb (about 1/2 inch pieces)


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the crust: In a medium bowl, combine 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crumb mixture evenly into the bottom of the prepared pan to form the crust. Bake the crust for 12 minutes until lightly set.
  4. While the crust bakes, prepare the filling: In a large bowl, whisk together 1 cup sugar, 1/4 cup flour, lemon zest, and lemon juice.
  5. Add the sour cream and eggs to the sugar mixture. Whisk until smooth and well combined.
  6. Gently fold in the chopped rhubarb pieces.
  7. Pour the sour cream and rhubarb filling evenly over the warm, pre-baked crust.
  8. Return the pan to the oven and bake for 40 to 45 minutes, or until the center is mostly set and a toothpick inserted near the edge comes out clean. The center might still jiggle slightly.
  9. Let the squares cool completely in the pan on a wire rack, about 2 hours, before lifting them out using the parchment paper overhang.
  10. Cut into 16 squares before serving.

Notes

  • For a firmer crust, chill the dough for 15 minutes before pressing it into the pan.
  • Do not overbake; the squares will firm up as they cool.
  • If your rhubarb is very tart, you may increase the filling sugar by 1/4 cup.
