- 1 cup warm water (about 110°F)
- 2 3/4 cups all-purpose flour

- 8 cups water (for boiling)
- 1 large egg, beaten (for egg wash)
- Coarse salt, for topping
Instructions
- Activate the yeast: In a small bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
- Mix the dough: In a large bowl, whisk together the flour and salt. Pour in the yeast mixture and the melted butter. Mix until a shaggy dough forms.
- Knead the dough: Turn the dough onto a lightly floured surface. Knead for 5-7 minutes until the dough is smooth and elastic.
- First rise: Place the dough in a lightly oiled bowl, turning to coat. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
- Shape the bites: Punch down the risen dough. Divide the dough into 4 equal pieces. Roll each piece into a long rope, about 1 inch thick. Cut each rope into 1-inch pieces.
- Prepare the bath: In a large pot, bring 8 cups of water and the baking soda to a boil.
- Boil the bites: Working in batches, carefully drop the pretzel bites into the boiling water for 30 seconds. Use a slotted spoon to remove them and place them on a baking sheet lined with parchment paper.
- Bake: Preheat your oven to 425°F (220°C). Brush the boiled bites with the beaten egg wash. Sprinkle generously with coarse salt.
- Bake for 10-12 minutes, or until golden brown. Serve warm with your favorite dipping sauce.
