- 1.5 lbs pork tenderloin
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the pork tenderloin dry with paper towels.
- In a small bowl, mix together olive oil, smoked paprika, garlic powder, salt, and pepper.
- Rub the spice mixture all over the pork tenderloin.
- Place the pork tenderloin in a baking dish.
- Roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- While the pork is roasting, prepare the glaze. In a small saucepan, whisk together maple syrup, soy sauce, Dijon mustard, and apple cider vinegar.
- Heat the glaze over medium heat until it simmers and thickens slightly, about 3-5 minutes.
- Once the pork is cooked, remove it from the oven. Brush the maple glaze generously over the pork tenderloin.
- Return the pork to the oven for another 5 minutes to allow the glaze to caramelize.
- Let the pork rest for 5-10 minutes before slicing and serving.
Notes
- For an extra smoky flavor, you can add a pinch of chipotle powder to the spice rub.
- If you don’t have apple cider vinegar, you can substitute with white vinegar or lemon juice.
