  • 1.5 lbs pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels.
  3. In a small bowl, mix together olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Rub the spice mixture all over the pork tenderloin.
  5. Place the pork tenderloin in a baking dish.
  6. Roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  7. While the pork is roasting, prepare the glaze. In a small saucepan, whisk together maple syrup, soy sauce, Dijon mustard, and apple cider vinegar.
  8. Heat the glaze over medium heat until it simmers and thickens slightly, about 3-5 minutes.
  9. Once the pork is cooked, remove it from the oven. Brush the maple glaze generously over the pork tenderloin.
  10. Return the pork to the oven for another 5 minutes to allow the glaze to caramelize.
  11. Let the pork rest for 5-10 minutes before slicing and serving.

Notes

  • For an extra smoky flavor, you can add a pinch of chipotle powder to the spice rub.
  • If you don’t have apple cider vinegar, you can substitute with white vinegar or lemon juice.
  • Serve with your favorite roasted vegetables or a fresh salad.
