- 6 ears of corn, husked
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/2 cup crumbled cotija cheese
- Lime wedges for serving
Instructions
- Preheat your grill to medium-high heat.
- Brush the husked corn with olive oil.
- Place the corn directly on the grill grates. Grill for 10-15 minutes, turning occasionally, until the kernels are tender and slightly charred.
- While the corn grills, combine mayonnaise, sour cream, cilantro, lime juice, chili powder, smoked paprika, and garlic powder in a small bowl. Mix well.
- Once the corn is grilled, remove it from the heat.
- Spread the mayonnaise mixture evenly over each ear of corn.
- Sprinkle generously with crumbled cotija cheese.
- Serve immediately with lime wedges.
Notes
- For extra smoky flavor, you can add a small amount of wood chips to your grill.
- If you do not have cotija cheese, you can substitute with feta cheese.
- You can adjust the amount of chili powder to your spice preference.
