Ingredients

  • 6 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/2 cup crumbled cotija cheese
  • Lime wedges for serving


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the husked corn with olive oil.
  3. Place the corn directly on the grill grates. Grill for 10-15 minutes, turning occasionally, until the kernels are tender and slightly charred.
  4. While the corn grills, combine mayonnaise, sour cream, cilantro, lime juice, chili powder, smoked paprika, and garlic powder in a small bowl. Mix well.
  5. Once the corn is grilled, remove it from the heat.
  6. Spread the mayonnaise mixture evenly over each ear of corn.
  7. Sprinkle generously with crumbled cotija cheese.
  8. Serve immediately with lime wedges.

Notes

  • For extra smoky flavor, you can add a small amount of wood chips to your grill.
  • If you do not have cotija cheese, you can substitute with feta cheese.
