- 6 hard-boiled eggs, peeled and halved lengthwise
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon fresh lemon juice
- 2 ounces smoked salmon, finely chopped
- 1 tablespoon fresh dill, chopped, plus more for garnish
- Salt and black pepper to taste
Instructions
- Carefully remove the yolks from the hard-boiled egg whites. Place the yolks in a medium bowl.
- Mash the yolks with a fork until smooth.
- Add the mayonnaise, Dijon mustard, and fresh lemon juice to the mashed yolks. Mix until well combined and creamy.
- Fold in the finely chopped smoked salmon and fresh dill.
- Season with salt and black pepper to taste.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish with additional fresh dill before serving.
Notes
- For a smoother filling, you can pass the mashed yolks through a fine-mesh sieve before mixing in other ingredients.
