Description

Smash burger tacos combine the juicy flavor of a smash burger with the convenience of a taco.


Ingredients

  • 1 pound ground beef (80/20 blend recommended)
  • 8 small flour tortillas
  • 1/2 small onion, finely diced
  • 4 slices American cheese, quartered
  • 1/4 cup pickles, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • Salt and black pepper to taste
  • Optional toppings: shredded lettuce, tomato, extra pickles


Instructions

  1. In a small bowl, mix together mayonnaise, ketchup, and mustard to make the burger sauce. Set aside.
  2. Divide the ground beef into 8 equal portions. Roll each portion into a ball.
  3. Heat a large cast-iron skillet or griddle over medium-high heat.
  4. Place a tortilla in the skillet. Immediately place a beef ball on top of the tortilla in the center.
  5. Using a spatula or burger press, firmly smash the beef ball onto the tortilla, spreading it to the edges.
  6. Season the beef with salt and pepper.
  7. Cook for 2-3 minutes, or until the edges of the beef are browned and crispy.
  8. Flip the taco. Add two quarters of cheese on top of the cooked beef.
  9. Cook for another 1-2 minutes, or until the cheese is melted and the tortilla is lightly browned and crispy.
  10. Remove from the skillet and repeat with the remaining beef and tortillas.
  11. Top each smash burger taco with chopped onions, pickles, and a drizzle of the burger sauce. Add optional toppings as desired.
  12. Serve immediately.

Notes

  • Using a cast-iron skillet gives the best crust on the burger.
  • Don’t overcrowd the skillet; cook in batches if necessary.
  • Adjust the amount of burger sauce and toppings to your preference.
