Ingredients

  • 3-4 pounds pork shoulder (Boston butt)
  • 1 large onion, chopped
  • 1 cup chicken broth
  • 1 cup barbecue sauce, plus more for serving
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 12 hamburger buns or slider rolls
  • Coleslaw, for serving (optional)


Instructions

  1. Trim excess fat from the pork shoulder. Cut the pork into 2-3 large chunks.
  2. Place the chopped onion in the bottom of a 6-quart slow cooker.
  3. In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub the spice mixture all over the pork chunks.
  4. Place the seasoned pork on top of the onions in the slow cooker.
  5. Pour chicken broth, barbecue sauce, and apple cider vinegar over the pork.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork is fork-tender and easily shreds.
  7. Carefully remove the pork from the slow cooker and place it on a large cutting board or in a shallow dish.
  8. Using two forks, shred the pork. Discard any remaining fat.
  9. Return the shredded pork to the slow cooker and stir it into the cooking liquid, ensuring it is well coated.
  10. Serve the pulled pork warm on hamburger buns, with extra barbecue sauce and coleslaw if desired.

Notes

  • For extra flavor, sear the pork chunks in a hot pan before adding them to the slow cooker.
  • Adjust the amount of barbecue sauce to your taste.
  • Leftover pulled pork stores well in an airtight container in the refrigerator for up to 3-4 days.
  • Freeze leftover pulled pork for up to 3 months. Thaw in the refrigerator overnight before reheating.
