- 2 lbs boneless, skinless chicken breasts
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (4 ounce) can diced green chilies
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- Salt and pepper to taste
- Optional toppings: avocado, shredded cheese, cilantro, tortilla strips
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Add crushed tomatoes, black beans, corn, green chilies, chicken broth, onion, and garlic over the chicken.
- Sprinkle chili powder, cumin, and oregano over the ingredients. Season with salt and pepper.
- Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Remove the chicken breasts and shred them using two forks.
- Return the shredded chicken to the slow cooker and stir to combine.
- Serve hot with your favorite toppings.
Notes
- For a thicker soup, mash some of the beans against the side of the slow cooker before shredding the chicken.
- You can add a squeeze of fresh lime juice before serving for brightness.
- Shredded cooked chicken works well if you are short on time.
