Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can diced green chilies
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: avocado, shredded cheese, cilantro, tortilla strips


Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Add crushed tomatoes, black beans, corn, green chilies, chicken broth, onion, and garlic over the chicken.
  3. Sprinkle chili powder, cumin, and oregano over the ingredients. Season with salt and pepper.
  4. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Remove the chicken breasts and shred them using two forks.
  6. Return the shredded chicken to the slow cooker and stir to combine.
  7. Serve hot with your favorite toppings.

Notes

  • For a thicker soup, mash some of the beans against the side of the slow cooker before shredding the chicken.
  • You can add a squeeze of fresh lime juice before serving for brightness.
  • Shredded cooked chicken works well if you are short on time.
