- 1 tablespoon olive oil
- 1 pound ground lamb
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 cup red wine (optional)
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1/2 cup frozen peas
- Salt and black pepper to taste
- For the topping:
- 2 pounds potatoes, peeled and quartered
- 1/2 cup milk
- 1/4 cup butter
- Salt and white pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- Boil potatoes in salted water until tender. Drain and mash with milk, butter, salt, and white pepper. Stir in Parmesan cheese.
- While potatoes cook, heat olive oil in a large oven-safe skillet over medium-high heat. Add ground lamb and cook, breaking it up, until browned. Drain excess fat.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in garlic, rosemary, and thyme. Cook for 1 minute until fragrant.
- Pour in red wine, if using, and scrape up any browned bits from the bottom of the skillet. Let it simmer and reduce slightly.
- Stir in beef broth, tomato paste, and Worcestershire sauce. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken.
- Stir in frozen peas and season with salt and black pepper to taste.
- Spread the mashed potato topping evenly over the meat mixture in the skillet.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
Notes
- For an extra rich topping, use half and half instead of milk.
- Add a pinch of nutmeg to the mashed potatoes for a subtle warmth.
- If you don’t have an oven-safe skillet, transfer the meat mixture to a baking dish before adding the potato topping.
