Description
Make flavorful roasted potatoes using basic pantry ingredients for a very low cost.
Ingredients
Scale
- 2 lbs potatoes (Russet or Yukon Gold), cut into 1-inch pieces
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried rosemary
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cut potatoes with olive oil, minced garlic, salt, pepper, and rosemary until evenly coated.
- Spread the potatoes in a single layer on a large baking sheet. Do not overcrowd the pan.
- Roast for 30 to 35 minutes, flipping them halfway through, until they are golden brown and tender inside.
- Serve immediately.
Notes
- If you use potatoes already on hand, the cost for this dish is typically under $5.00 for a large batch.
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes before drying them thoroughly and tossing with oil.
- You can substitute dried thyme for rosemary if you prefer.
