  • 1 pound large shrimp, peeled and deveined
  • 2 medium zucchini, spiralized into noodles (zoodles)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine or low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste


Instructions

  1. Prepare your zoodles and set them aside.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about one minute until fragrant; do not let the garlic brown.
  4. Add the shrimp to the skillet. Cook for 2-3 minutes per side until pink and opaque.
  5. Pour in the white wine or broth and lemon juice. Let it simmer for one minute, scraping up any browned bits from the bottom of the pan.
  6. Add the zoodles to the skillet. Toss everything gently for 1-2 minutes until the zoodles are slightly softened but still have a bite. Avoid overcooking the zoodles.
  7. Stir in the fresh parsley. Season with salt and pepper.
  8. Serve your Shrimp Zoodle Scampi immediately.
