- 1 pound large shrimp, peeled and deveined
- 2 medium zucchini, spiralized into noodles (zoodles)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup dry white wine or low-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Prepare your zoodles and set them aside.
- Melt the butter in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about one minute until fragrant; do not let the garlic brown.
- Add the shrimp to the skillet. Cook for 2-3 minutes per side until pink and opaque.
- Pour in the white wine or broth and lemon juice. Let it simmer for one minute, scraping up any browned bits from the bottom of the pan.
- Add the zoodles to the skillet. Toss everything gently for 1-2 minutes until the zoodles are slightly softened but still have a bite. Avoid overcooking the zoodles.
- Stir in the fresh parsley. Season with salt and pepper.
- Serve your Shrimp Zoodle Scampi immediately.

- You can adjust the amount of garlic based on your preference.
- Make sure your shrimp are fully thawed before cooking for even results.
- If you prefer a richer sauce, add a splash of heavy cream at the end.
