Description

Ingredients

  • 1 pound linguine
  • 2 tablespoons olive oil
  • 2 pounds large shrimp, peeled and deveined
  • 6 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste


Instructions

  1. Cook linguine according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  3. Add minced garlic to the same skillet and cook for 1 minute, until fragrant.
  4. Pour in white wine or chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  5. Reduce heat to low and whisk in butter, one piece at a time, until melted and the sauce is emulsified.
  6. Return shrimp to the skillet. Add cooked linguine and toss to coat.
  7. Stir in fresh parsley. Season with salt and black pepper.
  8. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the garlic.
  • Freshly grated Parmesan cheese makes a great addition when serving.
  • If you do not have white wine, chicken broth works as a substitute.
