  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 2 medium zucchini, thinly sliced or spiralized

  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add zucchini to the same skillet and cook for 5-7 minutes, or until tender-crisp.
