- 1 pound large shrimp, peeled and deveined
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 red onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Preheat your grill to medium-high heat or your oven to 400°F (200°C).
- Tear off four large sheets of aluminum foil.
- In a bowl, toss the shrimp, bell peppers, zucchini, and red onion with olive oil, oregano, garlic powder, salt, and pepper.
- Divide the mixture evenly among the four foil sheets.
- Fold the foil to create sealed packets.
- Place the packets on the grill or in the oven.
- Grill or bake for 10-12 minutes, or until the shrimp is pink and cooked through.
- Carefully open the packets and serve immediately.
Notes
- Feel free to add other vegetables like broccoli florets or cherry tomatoes.
