Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste


Instructions

  1. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  2. Tear off four large sheets of aluminum foil.
  3. In a bowl, toss the shrimp, bell peppers, zucchini, and red onion with olive oil, oregano, garlic powder, salt, and pepper.
  4. Divide the mixture evenly among the four foil sheets.
  5. Fold the foil to create sealed packets.
  6. Place the packets on the grill or in the oven.
  7. Grill or bake for 10-12 minutes, or until the shrimp is pink and cooked through.
  8. Carefully open the packets and serve immediately.

Notes

  • Feel free to add other vegetables like broccoli florets or cherry tomatoes.
