Description

This shrimp and scallop pasta in garlic sauce is a quick and flavorful dish. It features tender shrimp and scallops tossed with pasta in a rich garlic butter sauce.


Ingredients

  • 1 pound linguine or fettuccine
  • 1 pound large shrimp, peeled and deveined
  • 1 pound sea scallops, patted dry
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 1/4 cup olive oil
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Lemon wedges for serving


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add scallops to the hot skillet in a single layer. Sear for 2-3 minutes per side until golden brown and cooked through. Remove scallops from the skillet and set aside.
  4. Add shrimp to the same skillet. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside with the scallops.
  5. Reduce heat to medium. Add butter to the skillet and let it melt.
  6. Add minced garlic and red pepper flakes (if using) to the melted butter. Sauté for 1 minute until fragrant. Do not brown the garlic.
  7. Pour in white wine or chicken broth. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
  8. Return cooked shrimp and scallops to the skillet with the sauce. Toss gently to coat.
  9. Add the cooked pasta to the skillet. Toss everything together until well combined and the pasta is coated in the sauce.
  10. Stir in fresh parsley. Season with salt and black pepper to taste.
  11. Serve immediately with lemon wedges.

Notes

  • Do not overcrowd the pan when searing the shrimp and scallops. Cook in batches if necessary to ensure even browning.
  • Adjust the amount of red pepper flakes to your spice preference.
  • Freshly grated Parmesan cheese can be added at the end for extra flavor.
