- 1 pound chicken livers, cleaned and trimmed
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Increase the heat to medium-high and add the cleaned chicken livers. Cook, stirring occasionally, until browned on all sides, about 5-7 minutes.
- Pour in the white wine and scrape the bottom of the pan to loosen any browned bits. Let the wine simmer and reduce slightly, about 2-3 minutes.
- Stir in the diced tomatoes and dried oregano. Bring to a simmer, then reduce the heat to low, cover, and let it cook for 15-20 minutes, or until the chicken livers are cooked through and the sauce has thickened.
- Season with salt and pepper to taste.
- Garnish with fresh chopped parsley before serving.

- You can serve this dish on its own, with crusty bread, or over pasta or polenta.
