  • 1 pound chicken livers, cleaned and trimmed
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Increase the heat to medium-high and add the cleaned chicken livers. Cook, stirring occasionally, until browned on all sides, about 5-7 minutes.
  4. Pour in the white wine and scrape the bottom of the pan to loosen any browned bits. Let the wine simmer and reduce slightly, about 2-3 minutes.
  5. Stir in the diced tomatoes and dried oregano. Bring to a simmer, then reduce the heat to low, cover, and let it cook for 15-20 minutes, or until the chicken livers are cooked through and the sauce has thickened.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh chopped parsley before serving.
