  • 1 pound large shrimp, peeled and deveined
  • 1 pound smoked sausage (like andouille or kielbasa), cut into 1-inch pieces
  • 2 ears of corn, husked and cut into 1-inch rounds
  • 1 pound baby red potatoes, halved or quartered
  • 1 medium onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes and sausage with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a large baking sheet.
  3. Roast for 15 minutes.
  4. While the potatoes and sausage are roasting, in the same bowl (no need to wash), toss the corn and onion wedges with the remaining 1 tablespoon of olive oil, Old Bay seasoning, paprika, and garlic powder.
  5. Add the corn and onion mixture to the baking sheet with the potatoes and sausage. Toss everything together gently.
  6. Return the baking sheet to the oven and roast for another 10 minutes.
  7. Add the shrimp to the baking sheet, distributing them evenly among the other ingredients.
  8. Roast for 5-7 minutes more, or until the shrimp are pink and cooked through.
  9. Remove from the oven. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

  • For extra flavor, you can add a few cloves of garlic, whole or smashed, to the baking sheet with the vegetables.
  • Feel free to add other quick-cooking vegetables like bell peppers or broccoli florets.
  • Adjust the Old Bay and other seasonings to your personal preference.
