- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 lb small red potatoes, quartered
- 2 medium zucchini, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup Kalamata olives (optional)
- 1/4 cup crumbled feta cheese (for topping)
Instructions
- Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper.
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to make the marinade.
- Add the chicken pieces, potatoes, zucchini, and bell peppers to the bowl. Toss everything well until the chicken and vegetables are evenly coated with the marinade.
- Spread the chicken and vegetable mixture in a single layer onto the prepared baking sheet. Do not overcrowd the pan; use two pans if necessary for proper roasting.
- Bake for 20 minutes.
- Remove the pan from the oven, gently toss the contents, and scatter the Kalamata olives over the top if using.
- Return to the oven and bake for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the potatoes are tender.
- Remove from the oven, sprinkle with feta cheese, and serve directly from the pan.
Notes
- For crispier potatoes, you can parboil them for 5 minutes before marinating and roasting.
- If you prefer smaller pieces, cut the chicken into 1.5-inch cubes.
- Use fresh lemon juice for the best flavor in the marinade.
