  • 1 pound Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup fresh basil, chopped
  • 1 pound pasta (such as penne or rigatoni)
  • Salt and black pepper to taste
  • Parmesan cheese, for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain excess fat.
  2. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes, dried oregano, and red pepper flakes (if using). Bring to a simmer, then reduce heat to low, cover, and let it cook for 15-20 minutes, allowing flavors to meld.
  4. While the sauce simmers, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
  5. Add shrimp to the simmering sauce and cook for 3-5 minutes, or until pink and cooked through.
  6. Stir in chopped fresh basil.
  7. Add the cooked pasta to the skillet with the sauce and shrimp. Toss to combine. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  8. Season with salt and black pepper to taste.
  9. Serve hot, topped with grated Parmesan cheese.
