Description
Prepare moist, pan-seared salmon fillets topped with a bright, rich lemon cream sauce. This recipe is fast enough for a weeknight meal.

- 4 (6 ounce) salmon fillets, skin on or off
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Pat the salmon fillets dry with paper towels and season both sides generously with salt and pepper.
- Heat the olive oil and butter in a large skillet over medium-high heat until the butter melts and foams.
- Place the salmon fillets skin-side down (if applicable) in the hot skillet. Sear for 4 to 5 minutes until a golden crust forms.
- Flip the salmon and cook for another 3 to 4 minutes, or until the internal temperature reaches 145 degrees Fahrenheit. Remove the salmon from the skillet and set aside on a plate.
- Reduce the heat to medium. Add the minced garlic to the same skillet and cook for 30 seconds until fragrant. Do not let it burn.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer and reduce slightly for 1 minute.
- Stir in the heavy cream, lemon juice, and lemon zest. Bring the sauce to a gentle simmer.
- Whisk in the Parmesan cheese until the sauce thickens slightly. Taste the sauce and add more salt and pepper if needed.
- Return the salmon fillets to the skillet, spooning the sauce over the top. Cook for 1 minute to heat through.
- Garnish with fresh parsley before serving immediately.
Notes
- For a lighter sauce, substitute half-and-half for the heavy cream, but simmer slightly longer to achieve thickness.
- Serve this salmon over steamed asparagus, rice pilaf, or pasta tossed with the extra sauce.
- If you prefer baking, bake the seasoned salmon at 400 degrees Fahrenheit for 12 to 15 minutes, then pour the prepared sauce over it.
