Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 red bell pepper, chopped
  • 1 sweet potato, peeled and cubed
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • Cooked quinoa, for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, cumin, paprika, garlic powder, salt, and pepper.
  3. Spread the seasoned chickpeas on one side of a baking sheet.
  4. On the other side of the baking sheet, toss the broccoli, cauliflower, red bell pepper, and sweet potato with a drizzle of olive oil, salt, and pepper.
  5. Roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized, and the chickpeas are crispy.
  6. While the vegetables and chickpeas are roasting, whisk together the tahini, lemon juice, and water in a small bowl to create a dressing. Add more water if needed to reach your desired consistency.
  7. To assemble the bowls, divide the cooked quinoa among serving bowls.
  8. Top the quinoa with the roasted chickpeas and vegetables.
  9. Drizzle with the tahini dressing.

Notes

  • Feel free to customize your Buddha bowl with your favorite seasonal vegetables.
  • For extra flavor, you can add a pinch of cayenne pepper to the chickpea seasoning.
  • This bowl is also delicious served with avocado slices.
