Description

A simple recipe for roasting carrots coated in a sweet and savory glaze made from honey, garlic, and butter.


Ingredients

  • 1 lb carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the cut carrots on a large baking sheet.
  3. In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined.
  4. Pour the honey garlic butter mixture over the carrots and toss them until they are evenly coated.
  5. Spread the carrots in a single layer on the baking sheet.
  6. Roast for 20 to 25 minutes, stirring halfway through, until the carrots are tender and slightly caramelized.
  7. Serve immediately.

Notes

  • For extra flavor, add 1 teaspoon of fresh thyme leaves to the butter mixture before tossing with the carrots.
  • If the glaze seems too thin after roasting, you can return the carrots to the oven for an extra 3 to 5 minutes to allow more liquid to evaporate and thicken the glaze.
