Old Fashioned Creamy Stovetop Rice Pudding

Description

Make this classic, creamy rice pudding on your stovetop using simple ingredients. It is the ultimate comfort food dessert, perfect served warm or chilled with a sprinkle of cinnamon.


Ingredients

  • 1/2 cup short-grain white rice (Arborio or similar)
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Ground cinnamon, for serving


Instructions

  1. Rinse the rice under cold water until the water runs mostly clear. Drain well.
  2. Combine the rinsed rice, whole milk, sugar, and salt in a heavy-bottomed saucepan.
  3. Place the saucepan over medium heat. Stir frequently until the mixture just begins to simmer.
  4. Reduce the heat to low. Continue to cook, stirring often to prevent sticking and scorching on the bottom, for 45 to 60 minutes. The pudding is done when the rice is tender and the mixture has thickened to a creamy consistency.
  5. Remove the saucepan from the heat. Stir in the vanilla extract.
  6. If you prefer a thicker pudding, allow it to cool slightly; it will continue to thicken as it cools.
  7. Serve warm, or transfer to a bowl, cover the surface directly with plastic wrap to prevent a skin from forming, and chill completely before serving cold.
  8. Serve with a dusting of ground cinnamon on top.

Notes

  • For an ultra-creamy result, stir the pudding every few minutes, especially as it nears the end of cooking time.
  • You can substitute 1/2 cup of the milk with evaporated milk for added richness.
  • This recipe is excellent for make-ahead dessert preparation.
