Description

Ingredients

  • 2 cups chopped fresh rhubarb
  • 1 cup dry red wine (like Merlot or Cabernet Sauvignon)
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/2 cup packed brown sugar
  • 1/4 cup molasses
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)


Instructions

  1. Combine the chopped rhubarb and red wine in a medium saucepan. Bring the mixture to a simmer over medium heat. Cook for 10 minutes, stirring occasionally, until the rhubarb softens significantly.
  2. Pour the rhubarb and wine mixture into a blender or use an immersion blender. Blend until mostly smooth.
  3. Return the blended mixture to the saucepan. Add the ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper, if using.
  4. Stir all ingredients together well. Bring the sauce to a gentle boil, then reduce the heat to low.
  5. Simmer the sauce, uncovered, for 30 to 40 minutes, stirring every 5 to 10 minutes to prevent sticking. The sauce will thicken as it cooks.
  6. Remove the sauce from the heat. If you prefer a very smooth sauce, strain it through a fine-mesh sieve, pressing on the solids.
  7. Cool the sauce completely before using. Store in an airtight container in the refrigerator.

Notes

  • This sauce pairs well with grilled pork ribs, chicken, or pulled pork.
  • For a smokier flavor, add 1 teaspoon of liquid smoke during the simmering stage.
  • If you prefer a sweeter sauce, increase the brown sugar by 2 tablespoons.
