Description

A detailed recipe for a refreshing Rhubarb Mojito using homemade rhubarb syrup, fresh mint, and lime.


Ingredients

  • 4 oz Homemade Rhubarb Syrup (see notes)
  • 2 oz White Rum
  • 1 oz Fresh Lime Juice
  • 8 Fresh Mint Leaves
  • 4 oz Club Soda
  • Lime wedges for garnish
  • Mint sprigs for garnish


Instructions

  1. Prepare the rhubarb syrup ahead of time.
  2. Place the mint leaves and lime juice in the bottom of a sturdy highball glass.
  3. Gently muddle the mint leaves to release their oils; do not shred them.
  4. Add the white rum and rhubarb syrup to the glass.
  5. Fill the glass with crushed ice.
  6. Top with club soda.
  7. Stir gently from the bottom up to combine the ingredients without losing carbonation.
  8. Garnish with a lime wedge and a fresh mint sprig.

Notes

  • To make simple rhubarb syrup: Combine 1 cup chopped rhubarb, 1 cup water, and 1 cup granulated sugar in a saucepan. Simmer until rhubarb breaks down (about 15 minutes). Strain the solids out and chill the syrup before use.
  • For a non-alcoholic version, omit the rum and increase the club soda to 6 ounces.
  • Adjust the amount of rhubarb syrup based on the tartness of your rhubarb and your sweetness preference.
