- 4 oz Homemade Rhubarb Syrup (see notes)
- 2 oz White Rum
- 1 oz Fresh Lime Juice
- 8 Fresh Mint Leaves
- 4 oz Club Soda
- Lime wedges for garnish
- Mint sprigs for garnish
Instructions
- Prepare the rhubarb syrup ahead of time.
- Place the mint leaves and lime juice in the bottom of a sturdy highball glass.
- Gently muddle the mint leaves to release their oils; do not shred them.
- Add the white rum and rhubarb syrup to the glass.
- Fill the glass with crushed ice.
- Top with club soda.
- Stir gently from the bottom up to combine the ingredients without losing carbonation.
- Garnish with a lime wedge and a fresh mint sprig.
Notes
- To make simple rhubarb syrup: Combine 1 cup chopped rhubarb, 1 cup water, and 1 cup granulated sugar in a saucepan. Simmer until rhubarb breaks down (about 15 minutes). Strain the solids out and chill the syrup before use.
- For a non-alcoholic version, omit the rum and increase the club soda to 6 ounces.
- Adjust the amount of rhubarb syrup based on the tartness of your rhubarb and your sweetness preference.
