Description
A tart and spicy sparkling cocktail featuring homemade rhubarb syrup infused with Grains of Paradise.
Ingredients

- 1.5 oz Gin
- 0.75 oz Fresh lemon juice
- 0.75 oz Rhubarb-Grains of Paradise Syrup
- 2 dashes Angostura bitters
- 3 oz Chilled club soda or prosecco
- Garnish: Thin rhubarb ribbon or lemon twist
Instructions
- Prepare the Rhubarb-Grains of Paradise Syrup: Combine 1 cup chopped rhubarb, 1 cup water, 1 cup granulated sugar, and 1 teaspoon whole Grains of Paradise in a saucepan. Bring to a simmer, stirring until sugar dissolves. Cook for 10 minutes. Strain the mixture, pressing solids gently. Cool completely.
- Chill a highball or Collins glass.
- Combine the gin, lemon juice, rhubarb syrup, and bitters in a cocktail shaker filled with ice.
- Shake well until thoroughly chilled, about 15 seconds.
- Double strain the mixture into the chilled glass filled with fresh ice.
- Top with club soda or prosecco.
- Gently stir once to combine the fizz.
- Garnish with a thin rhubarb ribbon or a lemon twist.
Notes
- For a non-alcoholic version, substitute the gin with 1.5 oz of non-alcoholic spirit or simply use 2.25 oz of chilled water and increase the syrup slightly.
- If you cannot find Grains of Paradise, substitute with 1/4 teaspoon of freshly cracked black pepper and a small strip of lemon zest for a similar peppery citrus note.
- Chill your glassware before mixing for the best cold retention.
