- 2 large chicken breasts (about 1.5 lbs total)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped fresh rhubarb
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup packed brown sugar
- 2 tablespoons molasses
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Prepare the Rhubarb BBQ Sauce: Combine rhubarb, ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, smoked paprika, garlic powder, and cayenne pepper (if using) in a small saucepan.
- Bring the mixture to a simmer over medium heat, stirring occasionally. Reduce heat to low and cook for 15 to 20 minutes, or until the rhubarb has broken down and the sauce has thickened slightly.
- Remove the sauce from the heat. Use an immersion blender or carefully transfer the sauce to a regular blender to blend until smooth. Set aside.
- Prepare the Chicken: Brush the chicken breasts with olive oil and season both sides with salt and pepper.
- Preheat your grill to medium-high heat (about 400 degrees Fahrenheit).
- Grill the chicken for 6 to 8 minutes per side, until the internal temperature reaches 165 degrees Fahrenheit.
- During the last 2 minutes of grilling, brush the tops of the chicken generously with the prepared Rhubarb BBQ Sauce. Flip and brush the other side, grilling for 1 more minute.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving with extra sauce on the side.
Notes
- For a tangier sauce, reduce the brown sugar by one tablespoon.
- If you prefer a thicker sauce, simmer it for an additional 5 minutes after blending.
- Marinate the chicken in a simple mixture of olive oil, salt, and pepper for 30 minutes before grilling for added flavor.
