Description
A bright, tart, and floral gin cocktail featuring homemade rhubarb syrup and elderflower liqueur, topped with soda water.
Ingredients

- 2 oz London Dry Gin
- 0.75 oz Fresh Lemon Juice
- 0.75 oz Rhubarb Syrup
- 0.5 oz Elderflower Liqueur
- 2 dashes Orange Bitters
- 2 oz Chilled Soda Water
- Garnish: Thin rhubarb ribbon or lemon wheel
Instructions
- Prepare the rhubarb syrup ahead of time.
- Combine the gin, lemon juice, rhubarb syrup, elderflower liqueur, and orange bitters into a cocktail shaker.
- Fill the shaker with ice.
- Shake well until the shaker is thoroughly chilled, about 15 to 20 seconds.
- Double strain the mixture into a chilled Collins or highball glass filled with fresh ice.
- Top the drink with 2 ounces of chilled soda water.
- Gently stir once to combine the soda water without losing carbonation.
- Garnish with a thin ribbon of fresh rhubarb or a lemon wheel.
Notes
- To make rhubarb syrup: Combine 1 cup chopped rhubarb, 1 cup granulated sugar, and 1 cup water in a saucepan. Simmer until rhubarb breaks down, about 15 minutes. Strain solids out and chill the syrup before use.
- If you prefer a sweeter drink, reduce the lemon juice to 0.5 oz.
- For an extra layer of flavor, use Prosecco instead of soda water for a slightly drier fizz.
