Make a unique, savory ketchup using fresh rhubarb and beetroot. This recipe balances tartness and earthiness for a flavorful homemade condiment.

- 500g fresh rhubarb, chopped
- 300g raw beetroot, peeled and chopped
- 200g granulated sugar
- 150ml apple cider vinegar
- 50ml water
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon ground allspice
- 1/2 teaspoon salt
Instructions
- Combine the chopped rhubarb, beetroot, sugar, apple cider vinegar, and water in a large, heavy-bottomed pot.
- Add the chopped onion, minced garlic, ground ginger, allspice, and salt to the pot.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the rhubarb and beetroot are very soft. Stir every 10 minutes to prevent sticking.
- Remove the pot from the heat and let it cool slightly for about 15 minutes.
- Carefully transfer the mixture to a blender or use an immersion blender to process until completely smooth. Work in batches if necessary.
- Pour the smooth mixture back into the clean pot. Simmer uncovered over medium-low heat for another 15 to 20 minutes, stirring often, until the ketchup has thickened to your desired consistency.
- Test the flavor and adjust salt or sugar if needed.
- Pour the hot ketchup into sterilized jars, leaving 1/4 inch headspace. Wipe the rims clean.
- Seal the jars with lids and process in a boiling water bath for 10 minutes for shelf stability.
- Remove jars and let them cool completely on a rack. Check seals after 24 hours.
Notes
- For a smoother texture, press the cooked mixture through a fine-mesh sieve before the final simmering stage.
- This ketchup pairs well with grilled sausages, roasted root vegetables, or sharp cheeses.
- If you prefer a less tart flavor, increase the sugar by 25g.
